The Best Fall Simmer Pot Recipes for a Cozy Home
Oh my! There is something about fall that makes home & life feel a little more special, and I LOVE IT! The cooler air starts rolling in, I tend to reach for a cup of something warm first thing in the morning, the blankets come back out, and everything about home and life feels a little more cozy. It is the season of warm mugs, soup simmering on the stove, candles glowing in the evening, and windows cracked open just enough to let in that crisp autumn air. One of my favorite ways to make a home feel cozy during this season is also one of the simplest: a fall simmer pot. If you have never made one before, a simmer pot is basically natural stovetop potpourri. You fill a pot with water, fruit, spices, herbs, and other aromatic ingredients, then let everything gently simmer together. Within just a few minutes, the kitchen begins to smell lovely. Before long, that scent starts drifting into the rest of the house. There is something especially comforting about the smell of apples, oranges, cinnamon, cloves, vanilla, and rosemary slowly warming on the stove. And unlike a recipe you have to measure perfectly, simmer pots are incredibly forgiving. You can follow a specific recipe, or you can simply look around your kitchen and use what you already have.
That is part of what I love about them. An apple that is getting a little too soft to eat? Use it.
Orange peels left over from breakfast? Save them. A couple of cinnamon sticks tucked in the back of the pantry? Perfect. A handful of fresh herbs? Throw them in. There really is no single right way to make a simmer pot. Some combinations are warm and spicy. Others are fresh and herbal. Some smell like apple pie, while others remind you of a quiet cabin in the woods. Today I am sharing some of my favorite fall simmer pot recipes, along with tips for making them last longer, ways to use kitchen scraps, slow cooker instructions, ingredient combinations, and even a simple idea for turning them into homemade fall gifts.
So grab a pot, put on something cozy, and let’s make the house smell like fall!
What Is a Simmer Pot?
A simmer pot is a pot of water filled with aromatic ingredients that is gently heated on the stove. As the water warms, the natural aromas from the fruit, herbs, and spices are released into the air. You may also hear them called stovetop potpourri, simmering spices, seasonal stovetop fragrance, or simply a natural home scent. They have been used in one form or another for a long time because the idea is so simple. Warm fragrant ingredients in water, and let the steam carry the scent through your home. Fall is one of the best seasons for simmer pots because so many of the traditional ingredients naturally fit the season.
Think cinnamon sticks, apples, orange peel, cloves, cranberries, ginger, nutmeg, star anise, rosemary, and even a few sprigs of fresh pine.
The best part? You don't need to spend a fortune buying special ingredients. Chances are, you already have a few things in your kitchen that would make a wonderful simmer pot.
And if you're anything like me, you probably love finding simple ways to make your home feel fresh without adding more things to your shelves.
How to Make a Fall Simmer Pot
If you've never made one before, you're going to love how easy this is.
You don't need any special equipment, although a small pot or saucepan works wonderfully.
Simply gather your ingredients, add them to a pot, cover them with water, and let everything warm gently on the stove.
Here's the basic method:
Fill a small or medium saucepan about halfway with water.
Add your choice of sliced fruit, fresh herbs, and whole spices.
Bring the water just to a gentle simmer.
Reduce the heat to low and allow the ingredients to slowly release their aromas.
Add more water as needed to keep everything submerged.
That's it!
Within about 15–30 minutes, you should begin noticing those wonderful fall aromas filling your kitchen.
Just remember to keep an eye on the water level. Never leave a simmer pot unattended or allow it to boil dry.
Now for the fun part: deciding what to put in it!

My Favorite Simmer Pot Supplies
One of the best things about making simmer pots is that you don't need much. A simple saucepan works perfectly, but there are a few kitchen essentials that can make the process even more enjoyable.
I love the idea of keeping a small pot specifically for simmering seasonal ingredients, especially if you make them often. A beautiful enamel saucepan, a small Dutch oven, or even a mini slow cooker can work well. Some other things worth keeping on hand are glass jars for storing dried ingredients, whole cinnamon sticks, star anise, and muslin bags for putting together homemade simmer pot gifts.
